How to Make Belizean Ceviche for the Start of Queen Conch Season!

Ingredients:
- Fresh, clean conch
- Lime
- Tomatoes
- Onions
- Cilantro
- Salt and black pepper
Optional additions:
- Cucumbers
- Carrots
- Habanero
Instructions:
- Thoroughly clean the conch and dice it into small pieces. Place in a bowl with lime juice and let sit until the meat turns white and tender.
- Dice tomatoes and onions. For more flavor and color, dice cucumbers and carrots.
- Blend the conch and the vegetables with freshly squeezed lime juice and chopped cilantro.
- For Belizean heat, add chopped habaneros to the mixture or serve them on the side. Note: Wear gloves or use a fork to hold the habanero while you cut into it, and thoroughly wash your hands.
- Season with salt and black pepper, then mix well.
